Healthy Fruit Cake Recipe

Put together the following in a pan

350g mixed fruit
75g butter (melted)
75g organic chopped apricots or cranberries
75g dates or figs or more mixed peel
300ml strong tea
leave to soak for a few hours (sometimes it ends up being a day!!)

Then add
3 organic med eggs
50-75g chopped walnuts – or nuts of your choice
100g wholemeal flour
100g ground Almonds
50g plain flour
3 good teaspoons baking powder
Stir together and put into loaf tin.
Bake in bread making on bake setting for 55 mins – I should think around 180C in oven for about same time.
I’m flexible with the fruit measurements and really add proportions to your liking.
It did have glace cherries but they are very sweet – and so these are the fruits I’ve chosen.
Basically remember what you choose so you can replicate it next time!!
